The answer to your question depends on several factors. There are parts of the transport path where a message within the same tenant would be encrypted, and parts where it would not.
By default Exchange 2013 saves 5GB of those Daily performance logs. If you want to change that 5GB default, it can be done in the Microsoft.Exchange.Disgnostics.Service.exe.config file.
